A BLT with Peanut Butter?
A New Look at an Old Favorite, Thanks to Bara Lake

One of the many benefits of an active life is that you can eat without guilt. After all, if you don’t keep your tank topped up, you’ll run out of fuel, right? So food isn’t just a source of pleasure. It also plays a vital role in helping cyclists, paddlers, and hikers keep on the go. We all have our favorite meals, of course. But sometimes you owe it to yourself to try something new. That’s why I paid very close attention when Bara Lake wrote to tell me about her take on an old standby. Bara just loves a good BLT—a bacon, lettuce, and tomato sandwich—but instead of using mayonnaise to stick things together, she uses…wait for it…peanut butter!

Here’s how she does it. First, she assembles her ingredients: crispy thick-sliced, hickory-smoked bacon, a couple of thick slabs of good bread (Bara thinks homemade is best, and I agree), some lettuce, and a fresh-from-the-garden tomato (store-bought’s OK, too), along with her favorite peanut butter. Then she spreads both slices of bread with peanut butter right up to the edge.

Next, she lays down a layer of lettuce and a thick slice of a juicy tomato…
